Ruben and Idalia Carrasco, the owners of Pachuco’s, first came to the UTPB-Small Business Development Center in September 2021, intending to obtain financing to convert their very successful food truck business into a brick-and-mortar establishment. They sell fusion food. They smoke brisket, chicken, and pork and fuse them with other Asian cuisines, for example. They won awards in several food truck competitions and were invited to community festivals in West Texas. They worked with a consultant to develop a business plan, including financial projections. They entered the 2021 Midland Entrepreneurial Challenge and advanced to the second round. In December 2022, the owners successfully moved into a building, the site for the historic Johnny’s BBQ in downtown Midland. They had a successful grand opening and are poised for significant growth.
