Grain Theory, LLC is founded by David Kasselman, Matthew Cogburn, and Jeramie Sivley. After working endlessly with the Abilene SBDC from 2018 to 2021 to complete their business plan and perfect their financials, David, Matthew, and Jeramie opened their restaurant in January 2021. Grain Theory is licensed as a restaurant through the TABC, has a main taproom with a maximum capacity of 128 and another 87 people can be accommodated in a connected space that is used for private events and overflow. In addition to craft brews, the menu is described as upmarket bar food including house-made sausages of brats, boerewors, appetizers, sausage boards, salads, grain bowls, and beer-infused specialties.
